Yoshi (Switch)'s face imageYoshi (Switch) originally appeared as an easter egg to replace the Sportsmate CPU with a Mii CPU in version 1.2.0 of Nintendo Switch Sports. Her Mii data file can be found in /Mii/MiiCharInfo004.dat.

Her Mii name in her Mii data file is ヨシ ("Yoshi"). Her Mii ID is as follows: 0F A5 39 35 4B 10 46 55 B7 F7 0D 2B 11 ED 51 A4

Her Mii data file does not contain any unused data.






Information

While the names of the CPU Miis from Wii Sports Resort were also given to the CPU Sportsmates characters in Nintendo Switch Sports, version 1.2.0 of the game added 10 CPU Miis as an easter egg, activated by holding down L + ZL or R + ZR when on the CPU configuration screen. Yoshi is one of the CPUs to have gotten a Mii version, however her Mii has been altered since her appearance on the Wii. Below is a comparison between her Wii appearance and her Switch appearance.

In order for Yoshi (Switch) to appear in Nintendo Switch Sports v1.2.0, one must begin a game of volleyball, and on the CPU configuration screen (where the player selects the difficulty of the CPU), hold down L + ZL on the left Joy-Con controller, or R + ZR on the right Joy-Con controller. If done successfully, a noise will play, and when the player begins the game, the Sportsmate CPU will be replaced with a Mii CPU using this Mii. The Mii CPU has the in-game title "Legend". As volleyball is done with two players on each team, Yoshi is paired with Lucía (Switch).
This pairing was likely done as a reference to a small piece of information revealed in the description of the table tennis stamp Table Titan in the PAL version of Wii Sports Resort (with "the current champion" referring to Lucía (Wii)), showing a student/teacher connection between the two:

The purpose for the Miis in Nintendo Switch Sports being different from their Wii originals is unknown, however an educated guess is possible to make by analyzing the Mii appearances and the data we have. In the September 2020 leaks, a document containing a list of every CPU Mii from Wii Sports Resort was found, including screenshot icons of each one. These images often differ from the Mii's final design - for example, Yoshi (Wii)'s favorite color from this document was originally lime green, but was later changed to forest green by the time Wii Sports released. Then, of note is Yoshi (Switch)'s favorite color, being lime green, just like this early version of Yoshi (Wii) found in this document (shown right).
That alone is of course not much, but let us then take a look at Lucía (Switch). While Lucía (Wii)'s design from the September 2020 leak document does not differ from her final design, some Wii Music promotional footage and screenshots show an even older Lucía (Wii) design - a design even older from the one we see in the September 2020 leaked document - in which it bears quite the resemblance to Lucía (Switch) in Nintendo Switch Sports (this version of Lucía shown on the left). While hard to make out the details, it should still be clear this version of Lucía (Wii) looks much closer to Lucía (Switch) than her official Wii appearance. It is not hard to imagine Nintendo had several versions of the document found in the September 2020 leaks, all with previous iterations of the Miis, and the one that surfaced is merely one iteration of it.
With that said, it's more than possible that when the developers of Nintendo Switch Sports needed to add Miis from the Wii, no tools for a direct conversion of the files were available, so Nintendo instead gave the developers a document much alike the one we've seen in the September 2020 leaks, simply an even earlier version of it containing earlier designs. Since the document only consists of images of the Miis, the developers of Nintendo Switch Sports ended up creating imperfect recreations of the already early Miis shown to them in this earlier document. And thus, we end up with the 10 Miis seen in Nintendo Switch Sports today since version 1.2.0. While none of this is technically confirmed, this is what is most likely what happened, especially considering Nintendo has been known to accidentally give out early in-development material several times before, both to the public and their own developers.
